Tarte de Santiago

This cake originated in Northern Spain during the medieval period. It is traditionally decorated with the cross of St. James, hence the name. I prefer sugar and sliced almonds. I usually sprinkle the top with demerara sugar prior to baking which, along with the sliced almonds, gives it a crisp crust on top. This cake is naturally gluten free, made with 100% almond flour. It’s rise is dependent on all of the eggs in the batter. It is gorgeous in flavor and very rich in flavor. This can be made as a single layer simple cake or as a two tiered cake filled with raspberry or cherry jam. It’s your choice!
