Layered Sicilian Fig and Shortbread Pastry

Luscious spiced fig filling sandwiched between tender melt-in-your-mouth shortbread pastry. It’s the grown-up version of the Fig Newton! It’s my adaptation of Nick Malgieri’s Sicilian Fig Bar. I’ve used shortbread in this recipe and then sprinkled demerara prior to baking to get some crunchy sweetness on top.

This gorgeous spiced fig filling caramelizes at the edges during baking, replacing some of the flour with cornstarch in the shortbread dough makes it ultra-tender! You can order these in 8 inch rounds sliced in to 8 wedges - $25
