Limoncello Strawberry and Pink Peppercorn Wedding Cake aka Kumce’s Cake

This cake has spent most of the last year evolving in my head. It started with my sweet Kumce- Tessa- asking me to make her wedding cake. Her wedding was a destination event at our house this last weekend. The event was beautiful and the cake was better than I imagined it would be.

The cake is a lovely dense sponge, layered with a strawberry pink peppercorn jam with strawberry-lemon cream these sandwich a tart lemon curd, enrobed in a smooth and rich vanilla swiss meringue buttercream.

The finished cake, simply adorned with fresh dahlias and simple buttercream piping.
